What is the difference between "bien" and "bueno" ?
I never know when to use which !

BIEN es un adverbio: Yo estoy bien.
bien. 1. Como adverbio de modo, significa ‘correcta y adecuadamente’: Cierra bien la ventana, por favor; ‘satisfactoriamente’: No he dormido bien esta noche; Estoy bien; ‘en buena forma, con buena salud’: Desde que hago ejercicio me encuentro muy bien.
- Antepuesto a un adjetivo o un adverbio, funciona como intensificador enfático, con valor equivalente a muy: «Pues está bien claro»; «Yo me vine a dormir porque era bien tarde»
- Como adjetivo invariable, significa ‘de buena posición social’: «Todos vivían en Miraflores, balneario de la gente bien»; «El tango fue llevado a Europa por esos niños bien y la alta sociedad de allá la [sic] adoptó con entusiasmo, creyendo que era una danza de la alta sociedad de acá»
- Conjunción distributiva de valor disyuntivo, que precede a dos posibilidades de las cuales solo se realiza una: «Son temas sobre los cuales hay que formar opinión, bien para apoyarlos, bien para realizarlos» Puede ir precedida de la conjunción o: «O bien no reprimían el cuerpo, o bien no reprimían el verbo»

BUENO... funciona como adjetivo:
La vitamina C es buena en el invierno para combatir resfríos.
La maestra es buena

"Bien" is an adverb meaning "well"; "Bueno/a/os/as" is and adjective meaning "good".
I see you are fluent in English. One of the biggest mistakes in English is mixing up "well" and "good", especially since we use them incorrectly so often in daily life that they seem correct. Once you learn the differences in English (assuming you don't already), you will know how to use them in Spanish. If you already do know the differences in English, just apply them the same way in Spanish.

I was thinking that, in practice, there is not a real difference between these expressions:
¡Qué bien!
¡Qué bueno!
