For lunch, I have a pizza on Monday
On Tuesday, I have salad.
For lunch, I have pizza on Monday.
On Monday, I have pizza for lunch.
I have pizza for lunch on Monday.

On Monday, I have pizza for lunch.
I have pizza for lunch on Monday.
Either of these are fine, as long as you are saying this is what you eat every Monday. You could also say "on Mondays".
This would also be OK:
For lunch, I have pizza on Monday, tacos on Tuesday, pad thai on Wednesday...
But otherwise it would sound awkward.
'On Monday, I have pizza for lunch'. < this is the better response, grammatically >
