The grammatical term "demonstrative" is related to the verb "to demonstrate" and refers to adjectives/pronouns that (in theory) can be accompanied by gestures/pointing (in English: this/that/these/those; in Spanish: este/esta/ese/esa/aquel/aquella [plus the plural forms]). For demonstrative adjectives in English, you need to add "one" ("this one", etc.) to form a demonstrative pronoun. In Spanish, the demonstrative can be either an adjective or a pronoun, depending on the context (but the pronouns are written with a tilde [accent mark] to distinguish them from the demonstrative adjectives)..
