What is the difference between the two uses of "I" ?

Fui = I went (preterite tense)

Voy = I go (present tense)

Marianne stated it perfectly. Fui is the supper irregular past tense of ir. Ir is one of the weirdest verbs that I have learned so far!

I'll restate it again: Fui is past tense, and Voy is a conjugation of the present tense.

What's the difference between:

"Me voy a casa" and "Voy a casa"?

or "Me estoy yendo a casa" and "Estoy yendo a casa"?

To say "I go home" you would say "Voy a casa".

To say "I am going home" you would say "Estoy yendo a casa".

To say "I am going to go home." you would say "Voy a ir a casa."

"Me estoy yendo a casa" is sometimes used and is not unusual in Argentina at least.

It's used when you want to say I'm going home and you mean that you are doing it at that moment, or you are already on your way home.
