How do you use hecha? Does it change to match what its talking about like gender and whether it is plural or singluar? For example how would I use it in this sentence: Las reservaciones fueron _____ un mes antes del viaje. Would I use hecho, hecha, hechos, or hechas?

Yes, "hecho/a.os/as" functions as an adjective, so "reservaciones hechas" is correct.
You will see "hecho/a/os/as a mano" (hand-made) quite a bit, and you will notice that the "hecho" will change to match the article that is hand-made.
