what woud the word or phrase be for a structure made from posts or poles, tree limbs, other natural sticks for a cover over a resting place in a garden or the yard, maybe even over a patio or dining area?

Ramada is the word used here in southern Arizona. It's likely a Tohono O'dom word.

The tribe's traditional ramada is constructed exactly as you described.

"Ramada" is derived from the Spanish term "rama" (meaning branch) and was applied to temporary open air structures. They were made of brush or branches (arbor) were popular in AZ during harvest time, & commonly refered as a "shady resting place." - bdclark0423, Jan 1, 2010

Paja = straw, twigs

Thatch(ed) Roof =

techo de paja with techo more indicative of a ceiling

azotea de la paja with azotea more indicative of roof

How about "Pérgola"? It's a term we use here in New England for an arbor as you described and it is a Spanish word.

"Gazebo" is the first word that came to my mind, but this word is not listed in the site dictionary (in English or Spanish) or in the Spanish-English references I have at home.
