Why "de" after "disfrutar" before "fama", but not "la" here?

In this sentence: Nuestros productos disfrutan de gran fama en el mundo.

Why not replace "de" with "la", what´s the meaning of "de" here?

Because "disfrutar de" means: to enjoy; to reap benefit from a thing; to have, to possess. It's a preposition you need to use just like "look forward to" or "disagree with". You could (rather awkwardly) translate "disfrutar de" to "derive joy/benefits from something".

Have a look at the dictionary definition.
