Come on people, Be polite. This person is new to this site and obviously a beginner. No need to mock him nor split hairs about the applicability of the sentence to all contexts. It's obviously pulled from a lesson consisting of similar sentences where the proper adjective form is to be created from a given noun or description to refer to the subject of the sentence..
Hola, Yungcash: ¡Bienvenido al foro!
The lesson is trying to teach you about concordance (agreement) of adjectives. Adjectives must match the noun that they modify in number (singular/plural) and gender (masculine/feminine/neuter).
In your example, one woman is the noun being modified. Usually adjectives that refer specifically to the female sex are feminine in gender.
Therefore we get:
Una mujer que habla italiano es italiana.
A hint to the proper form of the word can usually be given by other modifying words for the same noun. In your example, you could look to the indefinite article una to see that italiana must be singular in number and feminine in gender to show concordance with mujer.
Although Quentin provided the answer that the original poster probably sought, the other responses provide the only laughs of the evening. (The question might have been better phrased.)
Oh look ...another guessing game!!
How about "bonita?"

.......probablemente una vendedora de pizza.
Like madlibs, we just need an adjective. In reality, you could put any adjective their from green, to smart, or even trustworthy.
