Thinking of what a crab cake is (at least in New Orleans), i.e. a breaded patty of crab, with all respect, I'm not certain the suggestion from other posters are accurate. How about:

"cangrejo empanizado"

"empanada de cangrejo"

Shredded meat is called machaca or deshebrada. So my best guess would be machaca de jaiba empanizada or jaiba deshebrada empanizada.

If you only say jaiba empanizada then you are referring to crab meat in chunks not shredded.
