Would I use Ser or Estar when describing my own physical appearance? Or do I have no clue what I'm talking about at all?
Yo soy alto y guapo.
Or would it be:
Yo estoy alto y guapo.

You are right in your assumption:
soy alto, soy maravillosa, soy inteligente....
some things can change though:
Estoy gorda, estoy enferma, estoy demacrada....
