El lunes = Monday

Los lunes = Mondays

Days of the week are masculine. "El lunes" - on Monday. "Los lunes" - on Mondays.

All the days of the week work this this: "el jueves" - on Thursday. "Los jueves" - on Tursdays. "el domingo" - on Sunday. "Los domingos" - on Sundays.

Los lunes means Mondays (in the plural), and el lunes means Monday.

For example, I go to the store on Mondays- you would use 'los lunes'

I will go to the store on Monday- you would use 'el lunes'
