Can I say "I'm assisting you?"

Instead of saying I'm helping you may I say "I'm assisting you?"

I would say "I'm assisting you" is fine. I use it all the time.

Yes, you can say that. It may be less common in informal settings, but it's an excellent translation for "ayudar".

I would say "I will be assisting you". or you might need to say, "Will you be needing further assistance?". Or if they haven't been helped yet, you could say, "Are you being helped?".
