You use quiera when expressing uncertainty and/or doubt

Not really: El que quieras explicar el subjuntivo así de fácil no significa que sea correcto. In this sentence, there is no uncertainty or doubt at all, and I use the subjunctive. No lo sé, no estoy seguro. Here there is uncertainty and doubt, and no subjunctive.

I understand why "sea" is there, but why did you use "quieras" instead of "quieres"?

Because we are not declaring it, but simply mentioning it to make a comment about it. When you declare things, you want people to know what you think, but Nathaniel does not need to be told that he wants to help, because it is obvious.

Don´t feel too bad, nearly every teaching book I have looked at says the same thing, including Linguaphone. It´s a good job Lazarus is here.

No, quiera is the subjunctive. You use quiera when expressing uncertainty and/or doubt.
