Is it possible to say "Lo hablaremos durante la cena'"

It is possible, but not very common. We normally say "Hablaremos de eso (or ello) durante la cena", although omitting "de eso" is very common, and perfectly understood. Other options include "sobre eso" and "acerca de eso".

It we will talk during dinner. Still no 'about' in the sentence.

I guess that sentence would make sense if you were speaking in the context where lo was referring to a language and you said 'we will speak it during dinner' (Lo hablaremos durante la cena).

There is no "about it" in the sentence. You would say Hablaremos acerca de (whatever) durante la cena.
