I'm trying to say "My beautiful one speaks french'" in a surprised context. Like I didn't know that the other person spoke french, so it's in a surprised form of a question.

Or should I use 'Habla'? or 'hablando'"

By t he way, in Spain we would rephrase this to:

¿Es que habla francés esa bella dama?

¿Acaso halba francés esa bella dama?

In any case in indicative form, not subjunctive!!

"Hable" is the subjunctive. Your use of it in this situation is correct. You could get away with "habla," but "hable" is technically more correct.
