Why is the spanish word for water el agua instead of la agua?

Because it begins with a stressed "a" . It can't have la when it's singular because la ends in a, and the two sounds are awkward together. It's still a feminine word, it just takes el in the singular. Plural it's las aguas. Las doesn't end in a.
