dulce de leche = sweet caramelized milk

alt text

Dulce de leche is often placed between two "shortbread" type cookies or used as a topping for ice cream.

In Mexico, this is usually made from goat's milk and is called "cajeta".

It is very easy to make using cans of Borden's Eagle Brand sweetened condensed milk. I can provide the recipe if anyone would like it.
