My grasp of Portuguese is not good enough to be absolutely sure, but it seems like the peculiar text you have quoted is trying to make a distinction between two types of "aulejo". One that could mean stale bacon, and another that refers to ceramic tiles.

I recommend two wonderful books on the art of aulejo: - "Azulejos du Portugal" aux éditions Citadelles et Mazenod - "Azulejos Portugal" published Citadels and Mazenod - "Les métamorphes de l'Azur" aux éditions ARS latina - "The shapeshifters of the Azure" published ARS latina

I found this. Seems to me that it could be a little helpful for you. You might think it has something to do with blue as well?

Azulejos significa tiles en inglés.
