The sentence in a book is "Los mejores nadadores bajaron hasta las raices mas hondos." and i was unsure of the meaning without knowing the meaning of "las raíces"

I think that las raíces is plural of la raíz, which means root or origen. Perhaps your phrase could be translated "The best swimmers went down to the deepest roots."
