How about:

¿Todavía esquia? ¿Todavía está esquiando?

Would "sigue esquiando" fit the context of "Does he still ski?" (or is he too old/incapacitated now?)

No, you need the Spanish gerund here:

sigue esquiando

the progressive form is almost the same in Spanish:

estar + gerundio

estoy esquiando
