I can answer one of your "when do I"'s. Never use elle. (except to refer to the letter ll).

Es increible pero mi clase favorita (empezar / entender)

This sentence does not say:

My favorite class is incredible but

What is says is:

It incredible, but my favorite class...

Perhaps that will help you in your selection of the proper verb.
