A sparkling white or occasionally rosé Spanish wine, cava is produced mainly in the Penedès region using the traditional techniques developed in Champagne, France. To maintain the constant temperature important to the process, the wine is stored and fermented in cellars or cavas, hence the name. Varieties of cava include: medium (semiseco), dry (seco), very dry (brut) and the extra dry variety especially recommended by connoisseurs called brut nature.
