Using google, I found "muy rellenado" for an overstuffed chair, so you might be able to say:

Hay una sofá muy rellenado.

We'll see what some native Spanish speakers have to say.

Rellenado, atiborrado, relleno

To overstuff=sobrellenar

muy rellenado sound like when you prepare a turkey and over- stuffed you can use in espanish deferents words like
- El sofa esta muy lleno ( means that have too much inside )
- El sofa tiene mucho relleno ( like the couch have too many filled inside )
- El sofa esta sobrecargado (you can used sobrecargado but usually this word means overhermelt )
