Ok..... here comes the dumbest question of the week but at least I have the huevos to ask. When you say "Yo muy bien" is it ok to leave out 'estoy' in this context? And will that also be the case when I'm speaking Spanish to Latin American natives? Thanks!

Since Heidita's a native speaker of Spanish, I think it's safe to assume that it's OK to omit the verb in a conversational exchange. It's not a complete sentence but in a conversation it's not uncommon to use sentence fragments in responding to a question. Similarly, in English if someone asks you "What's your favorite color'" you might respond "Me? Red." (actually two fragments)
