Everybody use to say: (in spanish of Spain)
'Start:
-Hola, ¿Qué tal?
-Hola, ¿Cómo estás?
-Hola, ¿Cómo te va?
-Hola, ¿Qué estás haciendo?
-Hola, ¿Qué has hecho ultimamente?
'Finish:
-Bueno, tengo que irme, ha sido un placer hablar contigo.
-Tengo que despedirme porque tengo que... (ir a trabajar, preparar la cena, etc).
-Bueno, me ha gustado hablar contigo, ahora debo irme porque...
-Bueno, he de irme, hasta pronto (hasta luego, hasta mañana, etc).

Are there any differences in how you would start/finish a conversation in Latin American Spanish'
I've also heard
-Hola, ¿Qué me dices? o
-Hola, ¿Qué me cuentas'
It will always depend on the country you are, you know, the "lingo", for an example, in Costa Rica, when you meet friends you may say "pura vida!" or "qué me dice!'", when you finish a conversation, you may say "bueno, se cuida!" or repeat again "pura vida, ahi nos vemos!".
Every country has its own slang, it is important to know some of it wherever you go.
In Spain we would say in slang "¿qué pasa'" and we coul add "tío/tía" to make it more slang.
