Both verbs mean to be, but in different ways.

The verb ser comes from the same word from which we derive words like essence and essential. It is used largely for permanent characteristics and descriptions.

The verb estar comes from the same word from which we derive words like status, state, and stand. It is used largely for temporary characteristics and locations.

The above two categories, while useful as a rule of thumb are not exhaustive by any means.
