The singer Jenni Rivera has a song titled "Mi gusto es". In the song she says "Aunque me den de balazos. Tope en eso, Tope en eso, que al cabo, mi gusto es". I know she is basically saying "Even if I get shot.....at last, its my pleasure". Can someone help me understand "tope en eso"?

It's "topen", not "tope".

It makes a lot more sense within the context of the whole song (I just copied that text from some lyrics site. It's not very correct Spanish, but I'm not going to start correcting the whole thing. I just want to use the context).

It means exactly the same as the English expression: "top that" (if you can), or "you can't top that".
