Entonces, el señor Quijada empieza a pensar que lo que lee en los libros de caballería es cierto. Un día, decide hacerse él también caballero andante para salir por los caminos a buscar aventuras, hacer justicia y cobrar eterno nombre y fama. En la primera parte sale dos veces. El señor Quijada empieza su nueva vida cambiándose el nombre: en adelante se ha de llamar don Quijote. A su caballo le pone Rocinante. Luego, como hicieron todos los caballeros andantes de los libros, don Quijote escoge a una mujer para que sea su dama. Esta dama, que en los libros era siempre una mujer bellísima e importante, es en el caso de Don Quijote una joven labradora de un pueblo vecino, el Toboso. Se llama Aldonza Lorenzo, pero don Quijote le pone Dulcinea del Toboso.

One day, he decides to become a knight as well to go out on the roads and seek for adventure, make justice, and have an eternal name and eternal fame. In the first part he appears twice. Mr. Quijada begins his new life by changing his name: from then on he calls himself Don Quijote. He names his horse Rocinante. Then, as all the (walking?) knights on the books did, Don Quijote chooses a beautiful woman to become her lady. This lady, that in the books was always a beautiful and important lady, was in the case of Don Quijote a young farmer from a close village named El Toboso. Her name is Alondra Lorenzo, but Don Quijote names her Dulcinea del Toboso.

Hi, I tried to offer an additional translation (if you want to call it that, lol). Something about it is a bit clunky, but I'm not a writer so, hey, it won't be perfect.

My Translation: Then, Mr. Q begins to think that what he read in the book of knighthood is true. One day, he decides to become also knight (errant?) himself going out on the roads looking for seeking adventure, doing justice and to recover acquiring eternal name and fame. In the first part leaves goes out twice two times. Mr. Q begins his new life by changing his name: from now on he is called Mr. Q. His gives his horse the name R. Then, as he did all the knights errants walking in the books, Mr. Q choose a woman to be his lady(or female) companion. This lady, who, in the books, was always beautiful and of importance, is, in case of Mr. Q, a young farmer (or peasant) from a neighboring town, Toboso. Her name is Aldonza Lorenzo, but Mr Q gives her the name Dulcinea of Toboso.

I just found this on Wikipedia (see the 1st and 2nd paragraph under "Plot") and it sounds similar to the paragraph above. You can compare them to get if you think it'll help (probably will).
