The most common way of saying goodbye in Spanish is "adiós". Adios comes from the word "a" which means "to" and "Dios" which means "God". So, "adiós" means "to God". If you want a simple way to say goodbye, just say "adiós".
In some countries, "chao" is commonly used. "Chao" comes from the Italian word for goodbye, "ciao". Saying "chao" is a simple and friendly way to say goodbye.
If you want to say, "Until we see each other again", then just say "Hasta la vista". "Hasta" isn't only used with "hasta la vista". You can say "hasta ahora", which means "we'll see each other in a while". "Hasta mañana" means "until tomorrow" and is a common way of saying goodbye at the end of a day.
"Nos vemos" means, "we'll see each other". Sort of like "see you around". It's a friendly way of saying goodbye.
If you want to say, "I'm leaving now", just say "me voy".
Finally, you can say "Me despido". This literally means, "I'm saying goodbye".
What are the different ways to say 'goodbye' in Spanish?
The following are some of the most common ways to say goodbye in Spanish:
Hasta luego = See you later
Hasta pronto = See you soon
Hasta mañana = See you in the morning
Hasta la vista (béibe) = Until I see you (baby) (made famous by Arnold Schwarzneggar )
Chao = goodbye (very casual/informal)
ádios = goodbye
Nos vemos = We'll see each other /meet up later (later)
Please note that Chao is the correct Spanish spelling, ciao is the Italian spelling and tchau is the Portuguese spelling (from Brazil)
This little history of saying goodbye in both English and Spanish will add some additional information to what's already been told.

Now in the title of your question, you put hi and bye...Do you want to know these as well?
Adiós - Good bye - is probably one of the most common. Hasta manaña - Until then - this is also used
I believe there are more.

I was told that no-one in Spain says 'hasta la vista'. Whereas 'hasta la próxima (vez)' is used for 'see you next time'. The 'vez' is dropped.

Se me decía que nadie en España dice 'hasta la vista'. Mientras que 'hasta la próxima (vez)' se usa para decir 'see you next time'. No se usa la 'vez'.
