My teacher wrote:

me ha gustado mucho

añimo con el español

on the paper she just handed back to me. what does 'añimo con el español' mean?

No no no, it's not añimo is ánimo. You probably got the accent on the a mixed up with the little worm on top of the n.

ánimo means encouragement. She is telling you to keep going. To be perseverant.

ánimo means encouragement. She is telling you to keep going. To be perseverant.

me ha gustado mucho
añimo con el español

Me ha gustado mucho. = I liked it a lot. (referring to your paper, no doubt). Ánimo con el español. = Keep up the Spanish. (more literally, "courage with the Spanish").
