Could somebody tell me what is the difference and in which circumstances each one should be used?

The difference is that umm, let me explain it this way,

Use soy-ser- when descibing; Description, Occupation, Characteristics, Time, Orgin, and Relationship

Use estoy-estar- when describing; Position, Location, Action, Condition, and Emotion

Soy means "I am", while Estoy means "The location that I am at".

Ser-to be

Estar-to be

We use estar for P.L.A.C.E and ser for D.O.C.T.O.R.

Use Estar for Position Location Action Condition Emotion

Example

Estoy sentado-I am sitting down

Estas acostada-you are lying down

El café esta cerca de la libreria-the cafe is near the book store

Estoy en una oficina-I am in a office.

Mi abuelo esta en la luna-my grandfather is out of it/my grandfather is on the moon(imagination)

Estamos comiendo manzanas-we are eating apples

Estan leyendo periodicos-they are reading newspapers

Estoy tan cansada-I am so tired

Esta enferma hoy-she is sick today

Estoy preocupada-I am worried

Estamos contentos-we are happy

In general, estar is used to describe the temporary aspects of a noun.

Ser-to be (irregular verb)

Use Ser for Description Occupation Characteristics Time Origin Relationship

Example

Jorge es guapo-Jorge is handsome

Soy Paralee-I am Paralee

Eres estudiante-you are a student

Soy profesora de espanol-I am the Spanish teacher

Maria es estudiosa-Maria is studious

Su novio es romantico-her boyfriend is romantic

Es la una y media-it is one thirty

Son las cuatro y veinticinco-It is four twenty-five

Celia es de espana-Celia is from Spain

Adela es peruana-Adela is peruvian

Minnie es la nieta de Johnnie y Hazel-Minnie is the grandaughter of Johnnie and Hazel

Marcos es su ex-novio –Marcos is her ex-boyfriend
