If your friend also speaks fluent English, then I think you would be better off writing the letter in English as you will be able to express yourself more easily and fully in English. Honestly that would be best. Then, meanwhile, you can start learning Spanish and sprinkle it more and more into your letters as you learn it.

Now, if your friend doesn't understand English, then that's a different story, of course.
