My professor looked over this sentence and circled the 'ol' part of español (as in it needed to be changed. The only change I can think to make is to change español to españolas. Would that work? Why or why not?

You are right. The phrase should be "Me gustó aprender nuevas palabras españolas"

In this case "españolas" is an adjective related with the feminine gender of the word "palabras".

You can't say: "....palabras español".

Yes, but the phrase may be correct, "spanish words," in spanish this refers to words that people say from Spain, like the American English and British English, different words, same meaning, as the spanish, every country has their own words.
