What does "martilleo de la tubería" means?

If you are referring to pressure wave and sound that a pipe makes when you quickly close a valve, or a faucet, it is also called "golpe de ariete" and the English equivalent is water hammer.

I hammer on the pipe. . .according to "Knock Three Times", the answer is no.

It could also mean hammering pipes, like a water hammer sound.

Because of the "de" I would say your second guess is correct, hammering of the pipe, ie water hammer.
