ya no te importo — al contrario, sí que me importas -> you don't care about me any more — on the contrary, you do matter to me

what is the point of using 'sí que' in this sentence? what changes if i don't use 'sí que' in that sentence ?

nothing changes, it is similar to saying indeed or truly. It add emphasis.

...on the contrary , yes, you do matter to me. (leave out the yes and it still means the same thing, just a little less emphatic.

I don't think the que is translatable here. It just serves to introduce (create) the clause
