I´m not sure that either of these is wholly correct. The word "ficha" is used as a counter or as a wager (such as with a poker chip); whereas, "símbolo" is more accurately used to describe a symbol or a sign (such as with writing symbols etc) or in the sense of "señal" (a signal).
"Ficha," then, is probably the best one to use, and it might be translated as:
"Poner las fichas o los cuartos de dólar."
Another way to say it might be"
"Colocar las fichas o los cuartos de dólar."
"Poner" indicates putting the money up (as with a wager); whereas, "Colocar" indicates an investment, so it probably depends on the targeted clientele and the type of transaction that this sign would target. (is this a one armed bandit or a video game that this sign would be on)
